I DID it! I picked ONE item to bake from the new Sprinkles Baking Book and completed the baking challenge! I chose the Coconut Cupcakes iced with Cream Cheese Frosting.

YES! I did it! I thought I was in the clear. NOPE! I had another predicament. Which one of my decorating ideas do I bring to life? I had 5 cupcake ideas. Now what? So, guess what I did? Yep, you got it. I made all 5 of them and asked my friends to vote on which one they loved.

VOILA! Meet my creative concoction and friend’s voted choice, “The Cupcake-colada”.

My inspiration? The coconut infused Pina Colada. It beckons images of tropical fun – a ‘Girls Night Out’ in the Bahamas with a splash of merriment. So my Pina Colada-inspired coconut cupcake became my delectable canvas. Slathered with decadent cream cheese frosting, sprinkled with flakey sweetened coconut, then garnished with a juicy pineapple slice, sweet maraschino cherry, and skewered with a festive umbrella. Then the final touch – I nestled my creation in a mini 3 oz Z-stemmed martini glass, then rimmed in cream cheese frosting and flaked coconut. Don’t forget the bendy straw!
