Adventures in Cooking – Parmesan Potato Cakes with Avocado Sauce

I love cooking and baking, and even moreso…EATING! Cooking tends to be my stress-release, my cerebral yoga, my tasty “O…H…M…”. Ironically, with all the baking and cooking I’ve done since I was a little girl, I never really dreamed about crafting my own recipe…until recently.

Suddenly, my creative baking senses were a-tingling! The Food and Wine Conference website announced the Dixie Sugars chocolate recipe contest and I was challenged! YES, chocolate! My kindred spirit and soulmate! Not only did I concoct a flourless chocolate cake, but there was another contest published for the Idaho Potato Commission using potatoes, I dared myself to create a potato-based side dish. Aside from the enticing prizes, the idea of conceiving a new recipe was titillating! The result of this inspiration, the below Parmesan Potato Cakes topped with Avocado Sauce. Hope you enjoy!

Potato Cakes w/Avocado Sauce

Parmesan Potato Cakes topped with Avocado Sauce

Preheat oven to 375°F.

Potato Cake Ingredients:

  • 2 cups of Idaho Red Skin potatoes, peeled & mashed
  • 2 tbl unsalted butter
  • 2 tbl sour cream
  • ½ cup shaved parmesan cheese
  • 1/8-1/4 tsp sea salt
  • 1 tsp Cantanzaro Herbs (mixture of lemon peel, Mediterranean thyme, rosemary, oregano, garlic, marjoram, basil)
  • ¼ tsp paprika
  • Fresh ground pepper
  • Olive Oil (to drizzle on potatoes prior to baking)

Avocado Sauce Ingredients:

  • 1 medium avocado, cut up and mashed
  • 2 tsp fresh squeezed lemon juice
  • ½ c sour cream
  • 2 tbl olive oil
  • Fresh ground pepper
  • Pinch of sea salt, to taste
  • 1 tsp horseradish sauce
  • ½ tsp hot sauce (optional)

Directions:

Preheat oven to 375°F. Generously grease a cookie sheet and set aside. Cut up red skin potatoes into quarters and boil.

While the potatoes are boiling, mix together the remaining ingredient ingredients for the Potato Cakes and set aside. Once the potatoes are done boiling, drain, add 2 butter and mash up with a fork. Add remaining ingredients into potatoes and mix with a spoon until combined. With an ice cream scoop, scoop up the potato mixture and form into a thick patty and place on prepared cookie sheet. Continue until all potato mixture is used up.

Before baking, drizzle the top of each patty with a bit of olive oil. Place in preheated oven and bake for 20-25 minutes, turning over half-way through cooking time. Potato cakes will be golden brown on top.

While potato cakes are baking, mix up the avocado sauce by mashing avocado and combining remaining ingredients. Cover and chill in refrigerator until potato cakes are done baking.

Top potato cakes with a dollop of Avocado Sauce when done baking and serve.
